Boardwalk Sausage

1 to 2 tbsps. cooking oil/fat of your choice

1lb. Italian sausage links

1 red pepper, sliced

1 green pepper, sliced

2 onions, sliced

Put cooking oil/fat and sausage into a skillet and brown lightly. Reduce heat to low, cover, and cook 10 to 15 minutes, turning once or twice. Remove cover, raise heat to low/medium, and add peppers and onions. Stirring occasionally, cook to desired tenderness, 10 to 20 minutes.

This recipe is delicious on its own, or served with a small side of potatoes and/or on a whole grain (preferably sprouted) roll. You’ll feel like you are at the boardwalk!
