  • 3 or 4 garlic cloves, minced

  • 2 to 4 tbsps. fresh basil, chopped

  • 6 to 8 plum tomatoes, chopped

  • Salt and pepper to taste

  • 8 slices Italian or French bread

  • Extra virgin olive oil

In a small bowl mix together garlic, basil, tomatoes, salt, and pepper.
Set aside.
Toast or lightly grill bread, then drizzle with olive oil.
Top each slice of bread with tomato mixture and serve with a green salad
or as an appetizer. Mangia!
