Chicken Stew
  • ·         1 to 2 tbsps. oil or fat of choice
    ·         6 to 8 chicken pieces on the bone
    ·         1 to 2 onions, sliced
    ·         2 to 3 carrots cut into bite-sized chunks
    ·         2 to 3 potatoes cut into bite-sized chunks
    ·         1 yam cut into bite-sized chunks (optional)
    ·         Water
    ·         ¼ cup wine (optional)
    ·         Salt and pepper to taste
    ·         Poultry seasoning to taste
    ·         Rosemary to taste
    ·         ½ to ¾ pound string beans, cut into bite-sized pieces
    ·         1 cup cabbage, sliced (optional)
    ·         1 tbsp. corn starch dissolved in a small amount of cold water

    Using a large stock pot, heat the oil or fat on medium heat and add the chicken. Brown the chicken lightly, then add the onion, stirring occasionally. Once browned, add the carrots, potatoes, and yam, if using. Add just enough water to cover everything and add the wine, if using. Now add the salt, pepper, poultry seasoning, and rosemary. Bring to a boil, reduce heat to low, cover, and let simmer about 25 minutes, stirring occasionally.
    Taste to see if more seasoning is necessary and then add the string beans and cabbage, if using. Bring to a boil again, then reduce heat to low, cover, and let simmer 10 to 15 minutes, stirring occasionally. When everything is tender, add the corn starch and water mixture gradually, stirring constantly. Bring to a boil again, cook about 2 minutes and you are ready for a delicious meal!
