Chocolate Pudding
½ cup whole cane sugar
2 tbsps. cornstarch
Pinch of salt
2 cups milk
2 ounces unsweetened chocolate, broken up
1 egg, beaten in separate bowl
2 tbsps. butter or coconut oil
1 ½ tsps. Vanilla
1/3 cup chopped nuts (optional)
1/3 cup semi-sweet chocolate chips (optional)

Combine sugar, cornstarch, salt, milk, and chocolate in heavy saucepan. Cook over low to medium heat, stirring constantly. Once thickened and bubbly, cook and stir 2 minutes. Remove from heat and gradually stir small amounts of the hot mixture into the beaten egg (about ½ cup total). Add egg mixture slowly into saucepan, stirring constantly. Cook and stir an additional 2 minutes over low to medium heat. Remove from heat and stir in butter/coconut oil and vanilla. Add nuts and chocolate chips, stir, and pour into bowl. Cover and chill in the refrigerator.
