Cocoa Brownies
  • ·         10 tbsps. butter
    ·         1 cup sugar
    ·         3 eggs
    ·         1 ½ tsps. vanilla
    ·         1/3 cup flour
    ·         ½ cup plus 2 tbsps. cocoa powder
    ·         Dash of salt
    ·         1/3 cup semi-sweet chocolate chips (optional)
    ·         ½ cup chopped walnuts or pecans (optional)

    Grease an 8-inch square baking pan. In a heavy saucepan over low heat melt the butter with the sugar, stirring occasionally. Set aside and cool. Beat the eggs in a bowl and add the vanilla. Stir in the flour, cocoa powder, and salt. Add this mixture to the saucepan with the butter and sugar and mix well. Stir in the chips and nuts if using, spread into the pan, and bake in a 350 degree oven for 22 to 28 minutes. Brownies are done when an inserted toothpick comes out not quite clean—if clean, the brownies may be too done. Cool several hours in the pan then cut into squares.
