Easy Greens

1 to 2 tbsps. cooking oil/fat of your choice
1 onion, sliced
¾ lb. collards, chard, turnip greens, or mustard greens
salt and pepper to taste

Heat cooking oil/fat in frying pan on low to medium heat. Add onion and sauté until golden brown, stirring occasionally. Add rinsed and chopped greens, salt, and pepper. Reduce heat to low, add a small amount of water, and cover.
Stir occasionally, cooking until desired tenderness, 10 to 15 minutes.
