Gingerbread
· ¾ cup sprouted whole wheat flour
· ½ cup whole wheat pastry flour
· 1 tsp. ginger
· 1 tsp. cinnamon
· ½ tsp. baking soda
· ½ tsp. baking powder
· ½ tsp. salt
· ½ cup butter, softened
· ¼ cup sugar
· 1 egg
· ½ cup molasses
· ½ cup boiling water

Grease and lightly flour an 8x1 ½ inch round or square baking pan. In a separate bowl, combine the first 7 ingredients. In a large bowl, beat butter and sugar till fluffy. Add egg and molasses and beat I minute. Add dry ingredients and water alternately, beating after each addition. Pour into pan and bake in a 350 degree oven for 25 to 35 minutes or till toothpick inserted in center comes out clean. Cool 10 minutes on a wire rack then remove from pan.
Frost or sprinkle with powdered sugar when totally cooled.
