Meat Loaf
2 Tbsps. olive oil
½ cup chopped onion
1 ½ lbs. ground beef, lamb, turkey, chicken, or combination
1-1 ½ cups tomato sauce
1 or 2 eggs
½ cup cooked rice
Salt, pepper, and fresh or powdered garlic to taste
¼ cup ketchup (optional)
Bacon strips (optional)

Sauté onion in olive oil on low to medium heat in small frying pan. Set aside to cool. In large bowl mix meat, about 1 cup of the tomato sauce, and the egg or eggs. Add salt, pepper, garlic, cooked onion and rice, and ketchup if using—mix well. Shape into one or two loaves on baking pan or pans. Spread remaining tomato sauce on top and bacon strips if using. Bake in a 350 degree oven for 45-60 minutes.
