Orange Coconut Squares
  • ¼ cup butter or coconut oil, softened
  • ¾ cup sugar (I used whole cane sugar.)
  • 1 egg
  • 1 ½ tbsps. orange rind
  • 1 tbsp. orange juice
  • 1 cup shredded coconut
  • 1/3 cup flour
  • ¼ cup sprouted flour
  • ½ tsp. baking powder
  • ½ tsp. salt
Cream butter or coconut oil with sugar in bowl. Beat in egg, orange rind, and orange juice. Mix in coconut. In a small bowl stir together the dry ingredients then add to batter, stirring just enough to blend. Spread into an 8” square pan lined with wax paper. Bake in a 350 degree oven for 20 to 25 minutes. Cool, cut, serve, and enjoy!
