Radical-Free Sauce

·         2 tbsps. extra virgin olive oil

·         2 medium or 1 large onion, chopped

·         4 to 6 garlic cloves, minced

·         2 or 3 medium to large tomatoes, chopped

·         Salt, pepper, and oregano (fresh or dried) to taste

In large sauté pan heat olive oil on low. Add onion and sauté at low to medium heat for 6 to 8 minutes. Add most of the garlic (save some to sprinkle at the end) and sauté about 1 minute. Add the tomatoes, salt, pepper, and oregano. If using fresh oregano, add about 10 minutes before the sauce is finished. Stir well, raise heat, bring to a boil, then reduce heat, cover, and simmer about 20 minutes. Remove lid, taste, season if necessary, and cook uncovered about 5 minutes.

Serve over steamed kale, spaghetti squash, or your favorite pasta. Top with remaining garlic and more oregano.
