Roasted Vegetables
1-2 tbsps. cooking oil/fat of your choice
1 onion, sliced
2 cups purple or green cabbage, sliced
1 red, green, yellow, or orange pepper, sliced
1 cup daikon, sliced (optional)
1 cup carrot, cut into bite-sized pieces (optional)
Salt and pepper to taste
Rosemary or oregano to taste

Mix everything together and spread into a large roasting pan. Roast in a 400 degree F. oven 35 to 45 minutes, stirring once or twice.
This can also be a cooked on the grill.
