Split Pea Soup
  • 2 tbsps. olive oil
  • 2 large onions, chopped
  • 6 to 8 celery stalks, including leaves, chopped
  • 5 to 7 garlic cloves, minced
  • 1 bag split peas, sorted and rinsed
  • 8 to 10 cups water
  • 1 cube or 1 tsp. chicken bouillon (optional)
  • Celery seed, thyme, oregano, and poultry seasoning, to taste
  • Salt and pepper, to taste
  • 3 or 4 potatoes, cubed
  • 6 to 8 carrots, sliced

  • Heat oil in large soup pot. Add onions and sauté over low to medium heat 5 to 8 minutes. Add celery and do the same, stirring often, then add the garlic. Sauté the garlic about 2 minutes, stirring, then add split peas and water. Add seasonings, bring to a boil, and stir.

    Reduce heat to low, cover, and simmer about 45 minutes, stirring occasionally. Add potatoes and carrots and bring to a boil again.
    Taste and add more seasoning if necessary. If thick, add more water. Cover and reduce heat to low.

    Simmer 30 to 45 minutes or until potatoes and carrots are tender.
    Taste again and add more seasoning and/or water, if necessary.
