Waffles
  • 1¾ cups flour (I use a combination of sprouted and whole wheat pastry flours)

  • 1 tbsp. baking powder

  • ½ tsp. salt

  • 2 or 3 eggs, separated

  • 1 ¾ cups milk

  • ½ cup melted butter or coconut oil

    In a large bowl mix the flours, baking powder, and salt together. In a smaller bowl beat the egg yolks, then beat in the milk and oil. Stir into flour mixture but do not over mix. In a clean bowl, beat the egg whites until stiff peaks form. Fold into batter, being careful to leave some fluffs of egg white.

    Pour some batter onto the grids of a preheated and lightly greased waffle iron. Follow waffle iron instructions to know how long to cook. Usually the waffle is done when the light goes out or when steam no longer comes out. Use a fork to lift each waffle off the grids.

    Serve immediately or move to a wire rack till cool and freeze. These are great with butter, coconut oil, berries, and maple syrup.
