Zucchini and Tomatoes
1-2 Tbsps. cooking fat or oil
1 medium onion, sliced
1 medium zucchini, sliced
2 tomatoes, chopped, or 1 can (14.5-oz) stewed tomatoes
2 garlic cloves, minced salt, pepper, oregano, and basil to taste

Sauté onion using low to medium heat in the cooking fat or oil of your choice until onion is lightly browned. Add zucchini and sauté 3-5 minutes; add minced garlic and sauté 1 minute on low heat. Add tomatoes and seasonings, bring to a boil, reduce heat, cover, and simmer low, 10-15 minutes.
